Sweet potato and chickpea tagine

This is a really easy one pot vegetarian meal, perfect when you are busy but want a healthy, filling dinner. Chop everything up, pop it in a dish and leave to cook! The flavours are fantastic; more sweet than spicy.

I like to serve with giant cous cous which has a bit more bite to it than normal cous cous but is just as quick and easy to cook. Regular cous cous or soft, fresh flatbreads are also wonderful accompaniments.

  1. Chop the onion and fry in olive oil in a heavy casserole dish or chef’s pan. Peel and chop the sweet potato into circa 1 inch chunks and cut up the apricots into small pieces.
  2. When the onion is soft and starting to brown (you want it to get to this stage to bring out its sweetness), add all of the other ingredients. Season and stir then pop the lid on the pan and leave to simmer for about 40min until the sweet potato is soft. You can pretty much leave this dish alone to cook, but give it a quick check after about 30min and if it is drying out, add a splash more water.
  3. Serve with 250g of giant or regular cous cous (cooked to package instructions- it will only take a few minutes), or flatbreads.
