Black bean “Bolognese”

This is a delicious warming dish for colder days. The dish is entirely plant based and full of nutritious ingredients. Black beans are a fantastic source of protein and fibre, and are also high in folic acid and magnesium. The flavours are inspired by traditional Bolognese sauce and so full of flavour that even hardened meat eaters will enjoy it!

  1. Finely chop the onion and mushrooms. Mince the garlic
  2. Fry the onion and garlic in a little vegetable oil in a large saucepan over a medium heat until softened but not brown (around 10 minutes). Add the mushrooms and cook for about 5 more minutes.
  3. Add the black beans (drained), canned tomatoes, Worcester sauce, soy sauce, cinnamon and herbs and mix.
  4. Leave to simmer gently for around 30 minutes with the lid on. When you put your pasta on, remove the lid and turn up the heat to let a little of the liquid boil off so the sauce thickens. Season to taste.
  5. Cook your spaghetti, following the packet instructions and serve with the “Bolognese”. Flat bread and green salad makes great sides too!
