Blackberry breakfast oats

Autumn, Recipes, Summer

Overnight oats make a brilliant breakfast, with the bonus that they are ready to grab and go with no morning preparation required. I like to keep extra pots of these in the fridge for healthy day time snacks too! Of course, you don’t need to use blackberries, although they are a perfect choice for late summer and early autumn. Any berries or soft fruits work perfectly.

You don’t need to make this dish plant based. You can use cow’s milk and natural yogurt instead, but you should eat within 24 hours as dairy won’t last as well as plant based alternatives.

Vegetarian, vegan, plant based, dairy free, gluten free
Ingredients are per breakfast pot but I make a few at a time as they are fine to leave in the fridge for a few days.

  1. Mix the oats, milk, maple syrup and cinnamon and put into a glass or small bowl.
  2. Blend all but a couple of the berries with the yogurt (mashing them together with a fork is absolutely fine if you don’t have a blender).
  3. Top the oats with the yogurt mix, then add the nut butter and remaining berries on top.
  4. Refrigerate for at least an hour, preferably leave overnight.
