Beetroot hummus

Beetroot is not only extremely versatile, it is beautiful as well! The candy stripe ones are especially pretty and have the added bonus of not staining everything like the red ones do. Beetroot is available for a long season in the UK and is very easy to grow in the garden or deep grow bags. 

One of my favourite beetroot recipes is beetroot hummus. An easy and delicious snack with loads of flavour, delicious with crackers, crusty bread or vegetable crudités.

Beetroot hummus
Super easy to make, a delicious and healthy snack and to top it all off, a stunning colour – there is nothing to not like about beetroot hummus!

1 cooked beetroot (roast at 170C for about 1 hour, then allow to cool, peel and chop)
1 400g can chickpeas (drained and rinsed)
2 tblsp olive oil
1 tblsp tahini
1 tblsp lemon juice
1/4 tsp sea salt

Simply mix together all of the ingredients in a blender until smooth. Enjoy with crackers/ crudités/ bread or however else you fancy!
